Keto-Friendly Egg Roll Bowl

For those of you who know @redbrunette, you know that we are #keto fanatics. We don't even walk on the same street as a bread delivery man for fear of cross contamination! We live in constant fear that if we cheat on #keto, the #keto cheating police will find us and hand us back all of the weight we lost. So, in an effort to constantly dodge carbs, we are finding creative ways to eat all of our favourites without the added carb-age. This egg roll in a bowl will make you sing like Julie Andrews in the Swiss Alps. Yes, it's that good!

INGREDIENTS

  • 1 pound ground pork

  • 1 head cabbage thinly sliced

  • ½ onion medium, thinly sliced

  • 1 tablespoon sesame oil

  • ¼ cup soy sauce or liquid aminos

  • 1 clove garlic minced

  • 1 teaspoon ground ginger

  • 2 tablespoons chicken broth

  • Salt and pepper to taste

  • 2 stalks of green onion


DIRECTIONS


  1. Brown ground pork in a large pan or wok over medium heat.

  2. Ensure cabbage and onion is thinly sliced into long strands. Use a spiralizer to cut the vegetables for quickest results.

  3. Add sesame oil and onion to pan with browned ground pork. Mix together and continue cooking over medium heat.

  4. Mix soy sauce, garlic, and ground ginger together in a small bowl. Once onions have browned, add the sauce mixture to the pan.

  5. Immediately add the cabbage mixture to the pan and toss to coat the vegetable and evenly distribute ingredients. Add chicken broth to the pan and mix. Continue cooking over medium heat for three minutes, stirring frequently.

  6. Garnish with salt, pepper, and green onion.


Now chow down to your heart's content and remember with every bite- fat is back!!
