Sassy Sumer Salad

Did you know that lettuce is a part of the sunflower family?


Now that Red Brunette Gals have contributed to your education, we have a delicious salad recipe to shake things up in your drab salad rotation this summer.

A wise woman once said "not all salads are created equal." I am that wise woman, and I stand by that statement. This sassy summer salad is light, refreshing, and will have your guests wondering what master chef created this masterpiece. We'll never tell if you don't.


Gram Worthy!

INGREDIENTS:

1 Head of Romaine Lettuce

1.5 Pint of Cherry Tomatoes

3 Celery Stalks

1/4 cup of Corn Niblets

1/2 English Cucumber (or 2 mini seedless cucumbers)

1 stalk of Mint


DRESSING:

1/3 cup of white wine vinegar or Balsamic Vinegar

1/4 cup of olive oil

a pinch of mustard

Salt and pepper to taste





Dice and chop all ingredients

Whisk the dressing ingredients together (magic bullet works splendidly as well)

Serve and Enjoy.


Another fun fact: Lettuce was first eaten by the ancient Kings of Persia over 2500 years ago. Feast like a king!
